BBQ, Biscuits (and more)

The social component can be very difficult, especially when eating at a house other than your own. If I’m going to stay with relatives for a couple days, I either bring my own keto bread or I just have to really eat a minimal portion of whatever they’re serving that might be carb heavy. I always loved biscuits and gravy, but now it’s ONE biscuit and gravy, not two or three.

With me, it just is what it is. If you looked at me, you’d think I’m a guy in my 40s in pretty good shape for my age, but those sugar-sensitive genes are hard to beat.
be careful with the keto stuff too...... i could write an entire term paper on this one.... but in short i will just say ketones are related to devastating blood acidosis and inflammation of the internal organs.... and the keto fad diets are not much more than the old atkins diet rebaked ... which was notorious for causing kidney stones.... or the caveman-paleo diet reimagined to try balancing out the fats and proteins but still hitting them way too heavy to be healthy for sensitive body organs like the liver and kidneys......

the trick with managing carbs whether they be high glycemic or low.. is to burn them off with exercise or physical work.... . and ideally to burn them at a rate consistent with how they metabolize and become available to the body..... but not to completely burn them off into a deficit like some of the fad diets and "health" routines would have you do - ...... . carbs are a vital energy source that provide nutrition and energy to organs like the heart and brain that do very poorly if deprived of them... ..

if a persons physical labor requires explosive energy then high glycemic carbs work well... . if it;s long duration but low to medium level work them low glycemic carbs work best... and in a perfect world our body would make us hungry for those types of things at appropriate times..... but we live in a world where tv and internet ads and the smell of fast food cooking controls our cravings more than the actual energy we are expending does.... ..it;s kinda scary sometimes....

Folks are looking for a quick fix. A quick fix is a temporary fix. If you're fat, believe it or not, it took you a long time toget that way. (Unless you have an underlying health problem) Losing it is going to take a long time. I graduated from high school weighing 150 lbs. My highest weight is right at 300. It took the better part of 40 years to reach that level. I hit plateaus at 240, 250, 270, etc. along the way. I'm back down to 270 now. It'll take some time to break through that plateau but weather is getting warmer and I have plenty of outdoors projects ahead of me. I've completely revamped my eating habits. No quick fixes... this is how it's going to be.

Oh... and I RARELY weigh myself. I don't need the stress. I know I'm progressing toward my goals because I am having to pull my belt tighter and I'm sleeping better.

until just a few years ago i always ate very unhealthy.... tons of junk food... pizza.. etc... but i never paid any attention to weight and stayed in relatively good shape due to heavy and often extreme physical activity... (long distance bicycling - surfing - hunting).... .i started eating healthy back when my dad was diagnoses with diabetes... mostly to help him stay on the right diet but also because i didn;t want to end up that way myself... .. and i had already started eating healthy long before the pandemic - but due to my genetics i have a tendeny to put on weight fast any time my physical activity stops... .so i ended up heavier by the end of 2021 than i ever was at any time in my life... i won;t say how many pounds that is but i am a female under 5 feet tall and of hispanic/navajo heritage - so it can probably be imagined.. ...:confused:

i am doing better with it now but i still don;t pay attention to weight that much, i just focus on getting back to the level of physical activity i was at before and switching to different clothing when something doesn;t fit..😣..... . ..but there was a time i was going on 40 mile, and sometimes a 100 + mile, bike ride that goes all the way around the island with a group of friends that are mostly triathletes and racers.... i haven;t been back out there with them for the 100 mile ride since the pandemic but i did do a few 40 mile excursions with them that follows a different path..... and we don;t hunt much anymore either so the rugged trek through the rainforest is missing.... there have been some painful moments but i am slowly getting back to form....

one thing i learned when reading about ways to help my dad was that diets and exercise routine are much easier to keep up if you have other people doing the same things with you.. and even eating the same way... he would never get on a bicycle and doesn;t stand up surf either... but the many hunting excursions in the rainforest we made plus him going into the water with us to spear fish for tako helped him a lot.... plus there is also a sauna - ice pool complex in this building that we make frequent use of..... there is also a complete gym and i started using that many years ago back when i first took up archery.... getting back to that after the pandemic has also been painful... .but it;s rewarding too... still gotta careful not to over do it and get hurt.... coz that throws everything backwards....

Absolutely. I’ve never done a keto diet, I just use keto bread for sandwiches because most of the other types do raise my BG higher than I like. One exception is sourdough bread, which is fine for sugar, and some whole grains are fine as well.

i have a major weakness when it comes to sourdough bread..... especially clam chowder served in a sourdough bread bowl...... in fact any time we actually do cook biscuits it;s always the sourdough variety.... but rather than gravy we eat them something that;s probably just as unhealthy..... butter and honey.... :rolleyes:... ...but that;s even more rare than a blue moon these days.... ...the only thing we eat gravy with is chicken fried steak... and that;s about as rare as a blue moon these days too...

the selection of whole grain breads available now is amazing.... and at places like the high falutin snoot store - whole foods... you can get just about any combination of grains you want in a bread..... we don;t go there often unless they have mizithra cheese in stock.... they also have good selections of lamb and bison too.... but very pricey....

by the way.... i just learned that phrase high falutin the other day here on the fff..... my dad.. although a bonified southerner and former redneck texan himself - never used it around us.... but he knew exactly what it meant when i asked him.... .. now i can;t remember who it was i saw use it here... ... but i like it.... ..i know a lot of ways i can use that here in public... and hopefully won;t get in trouble with it.... :sneaky:

Yep! There is! My wife will make them on occasion, but, makes buttermilk biscuits most of the time.
Now, the wife and I ate lunch at the Cracker Barrel today because we hadn't eaten since 4 AM before the 1st half of my stress testing today....They had some EXCELLENT biscuits, which was unusual for them. Their cornbread is usually pretty good, but, their biscuits usually leave something to be desired.

i messed up and typed "i" in that but i meant to say "we" because it;s not something i have made myself.... my dads wife has always made them in the past and she keeps the starters and dough at her house in her own kitchen. .. in fact the last time i remember having sourdough biscuits was at her apartment..... i always helped her form the dough and put them in the oven... .but as of yet - i still haven;t managed to get my own sour dough bread mix together that i was working on last year.... and she has been too busy with work to help with it... so i gave up and put the plans on hold when other things came up..... ..

but i learned through it all that it;s not easy to do.... ..it;s not something you just decide to do one morning and throw all the ingredients together..... ... ....which is why.. the last time we actually had biscuits at all, and did eat them with honey and butter.... they were buttermilk type and came out of cardboard cans..... .one of my room mates was hungry for them and brought them home from the store with her..... .she also cooked them herself.... but they were really good... .. the after breakfast carb rush from the honey was incredible... but it crashed as fast as it came up....
 
What kind of gravy do y’all prefer on your biscuit?

I beg to differ....We have sausage...We also have tomato gravy...We also have "red-eye" gravy...then there's chocolate gravy! Some good gravy's out there that people malign!

I grew up poor, so meat in a gravy was not optional😉. On a serious note, we only had gravy made with flour from Crisco. It wasn’t until I got into my later teenage years that I realize people made other kinds of gravy, using bacon and sausage and the like. As a result, I still have a pretty fond affinity for plain white gravy.
 
White w/sausage is my favorite. We occasionally mix in turkey sausage because it’s healthier, but I prefer the unhealthy stuff.

Gravy with healthy meat…that’s kinda like drinking a Diet Pepsi while eating a Krispy Kreme😁😉
 
I’ve never tried it, but I’d be willing. Personally, I’m not a fan of the ol’ red eye because I end up needing to drink ten gallons of water from all the salt.
True...me, too. Still, red eye is not that bad. We usually have it out on the trail.
 
Why NOT on a biscuit?
Oh I’d try it, I’d try anything once😁, but my gut reaction is that I don’t think I’d like a soggy biscuit. I like my gravy consistency thick and when it’s been on the thin side I ain’t cared as much for the b&g combo texture.
