I'm having trouble understanding the distinction.

Pretty much, except that your fate doesn't change because you cannot change it. :P

The reason for it was kind of amusing. He was saying how he believes how everything else will fall out is already decided, then my wife amusingly asked him when he became a Calvinist. He vehemently denied this then tried to explain how everything is already decided but that doesn't mean Calvinism is true (or something like that). Thus the statement that "you can make your fate but you cannot change your fate".

I tried explaining the difference in fatalism and determinism and *woosh*, right over the head.
