Trivia for the day:  South China (Cantonese) and Hong Kong generally makes Chow Fun (Chao Fan), which means fried rice.  The name is the same for fried noodles because they almost always use rice noodles.  (fan = rice)

You can get a similar dish in the Dominican Republic (thanks to the Chinese population there) called Chofan.
